Vegetable Khichdi
We makes many types of khichdi, but everyone has a different way of making it. If you make vegetable khichdi this way, it will be very tasty.
2 cups cooked rice
2 cups boiled moong dal
Whole spices
2 tablespoons ghee
1/2 cup green garlic
1/2 cup green onion
2 tbsp ginger chili paste
1 Small carrots
1 Small Eggplant
1/2 cup Peas (boiled)
1/2 cup Pigeon peas (boiled)
1-2 potatoes
2-3 Peantus
Fresh Coriander
1 onion cut into julienne
1 Lemon (For Serving)
Salt to taste
1/4 tsp Turmeric
1/4 tsp Hing
1 tsp Coriander powder
1 tsp Cumin seeds

1/4 tsp Hing
1 tsp Coriander powder
1 tsp Cumin seeds
First take 2 tbsp ghee in a pan, add cumin and asafoetida, add sesame seeds, now add all the spices and mix, now add potatoes and carrots and mix well.
Add turmeric, coriander powder, eggplant, boiled peas and pigeon peas mix it, now add boiled dal and rice and mix. Now let it cover and cook it for few minutes. Now take the remaining ghee in pan (Tadka Pan), add onion and let it turn brown, add chilli powder and pour it on khichdi.
Khichdi is ready, Serve it with lemon wedge.
Note: Normally you add everything in the cooker and cook. But making it this way enhances the taste and flavors.
